Colombia's Masterclass Terroir - Huila

Huila is one of Colombia’s most renowned coffee-growing regions, nestled in the Andes Mountains. Its high altitudes, volcanic soils, and diverse microclimates allow for slow cherry maturation, producing dense beans with concentrated sugars and remarkable complexity. Coffee production here is largely artisanal, led by smallholder farmers who predominantly use the fully washed method.

 

Our coffees from Huila are sourced through Majestic Coffees, our trusted local sourcing partner. Producing and exporting directly from origin, Majestic ensures full traceability, rigorous quality control, and sustainable practices throughout the supply chain.

Huila coffees are globally celebrated for their balance, clarity, and vibrant acidity. Typical flavor notes include citrus (lemon and orange), red fruits, and layered sweetness reminiscent of caramel or brown sugar. The cup profile is floral, medium-bodied, and finishes with lingering sweetness — a benchmark for Colombian specialty coffee.

Single Origin

Javier Cantillo – Finca Nazaret

Javier Cantillo continues a coffee legacy that began in 1940 with his grandfather, Rafael Cantillo, at Finca Nazareth. Now in its third generation, this family-owned farm combines traditional knowledge with modern processing techniques to ensure consistency, traceability, and refined cup quality. With the support of Café Sensia, managed by Sebastián Cantillo, the family has also developed a local roastery, allowing them to supply part of their production to the domestic Colombian market while strengthening their presence in specialty coffee.


The farm specializes in washed coffees, featuring varietals such as Pink Bourbon, Gesha, Colombia, and Castillo. Pink Bourbon offers delicate florals with tropical fruit undertones and a crisp finish, while Gesha expresses jasmine, bergamot, and tropical fruit with silky texture and balanced acidity. Colombia presents bright acidity with caramel sweetness and notes of red fruits and chocolate, while Castillo brings cocoa, brown sugar, and ripe stone fruit with a smooth, rounded body.


In addition to single-farm lots, Javier also works closely with neighboring producers to create regional community lots, mainly from Castillo and Colombia varietals, helping strengthen the local coffee network. These varietals are also used for Decaf using the Sugar Cane method. In this process, green coffee is lightly steamed to open the beans and then washed with ethyl acetate (EA), a naturally occurring compound derived from fermented sugar cane, which removes the caffeine while preserving the coffee’s natural flavors. The beans are then steamed again to remove any remaining EA and carefully dried, resulting in a decaf coffee that maintains much of its sweetness, body, and character.


Alexander Olaya – Finca El Bosque, Huila, Colombia

Alexander Olaya, a second-generation producer at Finca El Bosque, represents the new generation of specialty coffee in northern Huila. After years of low coffee prices and demanding manual labor, his family has strengthened their operation through resilience, improved farming tools, and better access to specialty markets. Today, coffee farming has become more sustainable and profitable, and Alexander proudly continues what is becoming a fourth-generation family legacy.

 

Committed to responsible production, Alexander avoids pesticides and conventional fertilizers, prioritizing environmentally conscious practices. Water used during processing is carefully treated before returning to the ecosystem, helping preserve the natural balance of the farm.

 

At Finca El Bosque, Alexander cultivates Colombia, Caturra, and Castillo, as well as specialty varieties such as Pink Bourbon and Gesha, primarily using the washed process. Alongside single-lot coffees from his farm, he also collaborates with neighboring farmers to produce community lots, supporting local producers and strengthening the regional coffee network.
