Located in the southwest region of Ethiopia, Dahab farm sits in the lush landscapes of Bonga, Kaffa—widely recognized as the birthplace of coffee. Spanning 330 hectares, the farm is positioned within the buffer zone of the famous UNESCO-registered Kaffa Biosphere Reserve. This unique location, with altitudes ranging from 1,800 to 2,100 meters, creates an ideal microclimate for growing exceptional coffee varieties. The high elevation and pristine environment allow for slow bean maturation, resulting in complex and rich flavor profiles.
Our local sourcing is overseen by Tekia Zerai and his daughter, Meheret, from Tomorrow’s Coffee. Tekia is committed to sourcing high-quality coffee through sustainable practices and collaborates closely with his counterparts and friends at Dahab Farm, located in a region blessed with rich soil and a favourable climate. They place a strong emphasis on environmental stewardship and community support. By fostering robust relationships with local farmers, Tekia ensures that each batch of coffee embodies the unique characteristics of the region while supporting the livelihoods of those who grow it. Thanks to Tekia’s hard work work and dedication, we are proud to offer coffee that is both ethically sourced and truly special.
Our primary source of varietals includes Ethiopian Heirloom coffee, with a particular emphasis on the 74110 and 74112 varietals. Ethiopian heirloom coffee is celebrated for its complex flavor profiles and vibrant acidity. The 74110 varietal is known for its exceptional cup quality, often featuring bright acidity and fruity flavors with sweet, juicy notes that attract specialty coffee enthusiasts. In contrast, the 74112 varietal is distinguished by its clarity and balance, typically showcasing floral and citrus notes that elevate the overall tasting experience. These varietals not only represent Ethiopia’s rich coffee heritage but also contribute to the unique and memorable flavors our customers love.
Additionally, our coffees are processed using three distinctive methods, each offering a unique flavor experience:
Natural/Sun-Dried: This traditional method enhances rich, fruity notes with flavors of chocolate, delicious fruits, and balanced bittersweetness, complemented by hints of berry, cinnamon, and delicate floral accents for a captivating cup.
Honey Processed: This method combines caramel sweetness with fruity complexity, delivering bold notes of chocolate, caramel, and honey, alongside the fruity nuances of plum and raspberry.
Anaerobic Processed: A highly refined technique that reveals wine-like characteristics, dark chocolate, and lively grapefruit acidity. This method layers flavors of plum and spice, resulting in an adventurous and vibrant flavor profile.
